PROCESSING OF SOYBEANS TO REDUCE ANTINUTRITIONAL FACTORS

Roasting, toasting, boiling, extrusion, autoclaving, and microwave heating are common thermal methods to reduce antinutritional factors. Boiling is more common in human foods and beverages than in feed production.
Protease Inhibitors – heat denatures protease inhibitors like Kunitz trypsin inhibitor (KTI) and Bowman-Birk inhibitor (BBI), significantly reducing their activity. Effective inactivation typically requires temperatures near or above 100°C for sufficient time (e.g., 20–30 minutes).
Complete elimination of residual BBI activity remains challenging. BBI is more heat-stable and hydrophilic, is inactivated more slowly. Heat treatment causes cleavage of specific peptide bonds in BBI, reducing its inhibitory activity against trypsin and chymotrypsin, although residual activity can remain if heating is insufficient.
Lectins – also known as soy hemagglutinins, are largely inactivated by aqueous heat treatments near 95–100°C, especially when soybeans are fully hydrated by soaking before heating. Typical treatments like boiling for 10 minutes or autoclaving effectively abolish lectin activity.
Tannins And Phytic Acid – boiling for about 60 minutes is very effective in eliminating tannins and reducing phytic acids in soybeans. Roasting and microwaving also reduce these compounds but to a lesser extent than boiling.
Saponins – roasting at temperatures between 120–140°C for about 5-9 minutes can reduce saponins, though this method is less effective than steaming or boiling in moisture-rich environments.
Excessive heat or very long heating times can damage essential amino acids, particularly lysine and reduce overall protein quality (Maillard reactions), so optimal duration-temperature combinations should be used to maximize inactivation of antinutritional factors while while avoiding nutritional losses.
Fermentation of soybeans is a highly effective method to significantly reduce or transform antinutritional factors into more bioavailable forms. Due to their high cost, fermented soybeans are usually only used in poultry starter feeds.
