Hydrochloric acid, mucus and a digestive enzyme, pepsin, are secreted by specialized cells in the proventriculus and starts the process of breaking down the structure of the food material.
The food trickles from the crop into the bird’s stomach (proventriculus or gizzard) where digestive enzymes are added to the mix and physical grinding of the food occurs.
Chickens don’t have teeth, so the gizzard grinds food into smaller pieces. They also don’t urinate, so their urinary waste is mixed with digestive waste at the cloaca
