A poultry lairage is a designated holding area within a slaughterhouse or processing facility where live poultry is kept temporarily before slaughter. The purpose of the lairage is to allow the birds to rest, recover from transportation stress, and be inspected for any health or welfare issues. Proper management of the lairage is critical for animal welfare and can also influence the quality of the final product.
For the purposes of this guide, lairage is defined as any building used to hold birds in modular systems of crates or drawers (i.e. ‘modules’) between end of journey from farm and slaughter.
